Mangrove Jack Sparkling Cider Kits

 

These kits comes in a foil pouch; the latest in convenience for ease of use and assured sterility.  Each pouch is cold filled using the latest nitrogen technology to provide the ultimate contamination products. The low temperature process retains the delicate flavours and aromas traditionally lost during the pasteurisation of cans by prolonged heating and hot filling.

PLEASE NOTE:  ALL of our ciders kits are GLUTEN-FREE!

There are many flavours to choose from - Apple, Pear, Strawberry/Pear, Mixed Berry, Raspberry Lime, Blueberry and Peach Passion.

 

2 stage Instructions.

While the instructions that come with the kit will work, we feel that the following instructions, utilizing a 2 stage process, and equipment more common in Canada, will yield a more consistently delicious product.

Use these instructions instead of the ones on the pouch.

To make this kit, you will also need:

· 1 kg Corn Sugar (Dextrose) for mixing.

· 300 g (2 cups) Corn Sugar (Dextrose) for bottling.

· Pressure safe bottles. (Plastic P.E.T, beer bottles with caps or sparkling wine bottles)

· Standard beer or winemaking equipment.

Original Gravity 1.040-1.048

Note: All equipment you are using should be cleaned and sanitized. A (pink) chlorinated detergent or Ecolox is recommended. (Use 1 teaspoon per litre of water.) Triple rinse everything.

Instructions for 23L:

1. Stand the pouch on a flat surface and carefully cut across the ’cut-line’ at the top of the pouch. Holding the base to stabilize it, remove the sachets from the ’dry’ compartment.

2. Add 3 litres of boiling water to the sterilized fermenter. Pour cider concentrate from the pouch into the fermenter, rinse out any remains using warm water and add to the fermenter. Stir well.

3. Add 1 kg of dextrose (corn sugar) and stir until dissolved. Top up to the 23 litre mark with cold water and stir well. (Ideal temperature for adding the yeast is 18-28̊C)

4. Sprinkle in the yeast and stir. Place the lid on top of the fermenter, (do not snap it down), and place it in an area where you can maintain a constant temperature of around 18-24̊C.

5. In approximately 12-24 hours you should see evidence of yeast activity on the surface of the cider. Allow the cider to ferment until the specific gravity reaches 1.015. (Usually 3-5 days). Now it is time to transfer (rack) the cider into the secondary fermentor.

Note: Neglecting to transfer at this time can be hazardous to your cider.

6. Gently syphon the cider into the secondary fermentor. Try not to disturb too much sediment. Make sure to tilt the primary to get all of the cider, but leave the heavy sediment behind.

7. Add some water to your air lock and attach it to yourfull carboy. Maintain the same temperature as before.

8. In about 7 to 10 days you will notice that the release of carbon dioxide gas through the airlock has slowed considerably or stopped completely. If it hasn’t, wait a few more days. If it has, the cider is ready to bottle. Rack the cider gently back into your sterilized primary fermentor. At this stage you might take a hydrometer reading to confirm that your cider is finished. S.G. reading should be between 1.005-1.010.

9. BOTTLING Boil 2 cups (300g) of corn sugar in 1½ cups of water on the stove. Gently stir this solution, along with the Cider Flavouring Pack , into your pail of cider so that it is mixed thourghly. Syphon the cider into your bottles to within 1½ inches from the top then cap them.

10. Keep the cider at room temperature (18-24°C) for 2-3 weeks. Next, move the cider to a cooler location and start to enjoy.

Note: If the cider ever seems under-carbonated at this stage, simply move it back to the warm area until it is properly conditioned. Most Apple or Pear cider will improve for a couple months in the bottles. Serve chilled and pour gently into a glass to avoid the light dusting of sediment that may have developed.

1820 Authentic IPA (yield:23L)

A traditional British IPA.  Rich, malty and full of hops with higher alcohol.

Description:  This is the real thing.  Very malty, full of hops, a higher than normal alcohol content and an overwhelming flavour.  Estry fermentation characteristics are a hallmark of strong beers and this one is no exception.  Traditionally brewed to survive the rigors of a longsea voyage from Britain to India during the Raj.  This strong ale is a great summer surprise and a tasty winter warmer.  O.G. 1.057  ~6.2%

Ingredients:  Malts – Medium Crystal Malt, Amber Malt, Light Malt Extract, Hops - Northern Brewer, Fuggles, East Kent Golding.  Yeast - Windsor

 

Barking Dog Brown Ale (yield:23L)

This dark North American brown has rich chocolate malt character combined with a very subtle smokiness.

Description:  This dark North American brown ale is more assertive than its British cousin. Rich chocolate malt character combined with a very subtle smokiness.Serve cool.

Ingredients:  Malts – Black Patent, Chocolate malt, Light crystal, Dark crystal, Peated (smoked) Light and Dark malt extract. Hops- Northern Brewer, fuggles. Yeast- Nottingham

 

Cascade West  Coast American Pale Ale (yield:23L)

Crisp, clean & well balanced with lots of hops!

Description:   West Coast Pale Ale is different enough from its British cousin to have gained its own designation as a “classic style”. Golden in colour, This crisp, clean beer has a floral aroma from the distinctly North American Cascade hops. Unlike British pale ales, strong fermentation characteristics (esters) are not a hallmark of this style. Serve cold, 36-45° F.

Ingredients:  Malts- Dextrine, Light Crystal Malt, Light Malt Extract. Hops- %100 Cascade. Yeast- Nottingham.

 

King's Royal Red Bitter(yield:23L)

This is a traditional English style bitter. A fresh East Kent Goldings hop aroma balance a this tasty ‘session beer’.

Description:  This is a typical English style ale. It derives its reddish colour from a small amount of roast barley. It has a balanced yet pronounced hop bitterness, and a fresh hop aroma. It has a low carbonation level, allowing its character to come through. Serve at cellar temperature – 50-55 degrees F. ~ 14 degrees C.

Ingredients:  Malts- Roast Barley, Medium Crystal, British Pale Malt, Light Malt Extract. Hops-Northern Brewer, East Kent Golding. Yeast- Windsor Ale.

 

Peat McFuggles Scottish Ale (yield:23L)

This traditional Scottish classic accents malt over hops. It also gains a touch of smokiness from peated malt.

Description:  This deep, traditional Scottish classic is similar to an English bitter with the accent more on malt than on hops. This example displays a slight smokiness due to the addition of a small amount of peated malt. It is sometimes called “80 Shilling” in reference to the amount of tax they used to pay on a barrel. Serve at cellar temperature.

Ingredients:  Malt- Amber Malt, Peated (smoked) malt, Medium Crystal, Light Malt Extract. Hops-Fuggles. Yeast- Windsor Ale

 

Bee-Mans Honey Brown Ale (yield:23L)

Subtle taste of honey blended with a chocolaty velvet smoothness.

Description:  The subtle taste of honey blended with the chocolaty velvet smoothness of a brown ale is a combination too good to miss. Light hop bitterness and smooth texture. Serve chilled.

Ingredients:  Malts- Dextrine, Light Crystal, Chocolate Malt, light and dark malt extract. Other Fermentable- Honey. Hops- Northern Brewer, East Kent Golding. Yeast- Nottingham.

 

Northern Lights (yield:23L)

Golden, crisp and refreshing.  A Canadian classic with a hoppy ending.

Description:  This is an excellent example of what Canadian ale should be. It is golden coloured, crisp, and clean. Those who like it... Delightfully refreshing. Serve Cold.

Ingredients:  Malt- Dextrine, Canadian 2-row, Light malt extract, High malt glucose. Hops- Northern Brewer, Cascade. Yeast-Nottingham Ale.

 

Old Peculiar (yield:23L)

Toffee and roast malt in the mouth with hints of ‘rum’ and a deep bitter-sweet finish. Deceptively drinkable at over 6% alc/vol.

Description:  This dark old ale originates from Theakston’s brewery in North Yorkshire, England. Toffee and roast malt in the mouth; deep, bitter sweet finish with delicate hop underpinning. Peculiar has a certain warmth due to its higher alcohol content (5.7% alc./vol.). Serve at cellar temperature.

Ingredients:  Malt- Chocolate malt, Black Patent, Dark Crystal. Hops-Northern Brewer. Yeast- Windsor Ale

 

Rory's Irish Red Ale (yield:23L)

A flavourful, well-balanced traditional Irish ale.

Description:  Ireland’s second most famous beer style (sometimes called amber), has become increasingly popular with North American Micros. This flavourful, well balanced ale, is a great starting place for those uninitiated with the wonderful Ale of the U.K. Serve cool (40-50 degrees F. ~ 14 degrees C.)

Ingredients:  Malts-Dextrine, Light Crystal, Chocolate Malt, Roast Barley, Light Malt Extract. Hops-Northern Brewer, Fuggles, East Kent Goldings yeast- Nottingham.

 

Best Coast IPA (yield:23L)

A half pound of hops in every batch! Experience the Halifax ‘Hop’ explosion.

Description:   full half pound of hops in every batch! Hoppy IPA’s might have originated on the WestCoast, but the BEST ones are made right here! Experience first hand, the Halifax ‘hop’ explosion. Here’s our version of this ‘full-on’ beer for ‘hop heads’. The hoppiest recipe we’ve ever made. Not for the faint of heart. These “North American” style IPA’s are much more citrusy than their British Cousins. But beware; at 6.4%, this brew can creep up on you. O.G. 1.060~6.4% alc./vol. *due to the large amount of hops in this delicious beer substitutes may sometimes be made.

Ingredients:  Malts- Medium Crystal, Munich Malt, Light Malt Extract. Hops- %100 Cascade (please note due to hop the amount of hops used in this beer, substitutions may need to be made during hop shortages.) Yeast- Nottingham.

 

Piccadilly Porter (yield:23L)

Delicious London porter with hints of roast and chocolate.

Description:  Porter originated in London, England, as a blend of stout and pale ale. It flourished for over two centuries before fading away to near oblivion. Revived by micros and homebrewers, this beer is dark (almost black) but not as roasty as a stout. Some subtle chocolate notes, and relatively low bitterness, make this flavourful session beer as popular today, as it was among the Hotel Porters of London’s past. Serve cool, 40-50 °F).

Ingredients:  Malts- Black Patent, Chocolate Malt, Dark Crystal, light and dark Malt extract. Hops- Northern brewer. Yeast- Windsor Ale

 

Belgian Farmhouse Saison (yield:23L)

Traditionally brewed at the beginning of spring as the cold months come to an end; Saison is a delicate blend of fruit, citrus and spice flavors. Sometimes this beer is also referred to as a “Farmhouse Ale” due to its Belgian roots of quenching the thirst of hard working farmers. Our version has a good amount of rye to add to the natural spiciness of this unique session beer.

OG: 1.048-52 ABV: 6% IBUs: 22 (Values are approximate)

Ingredients:  Grains: Munich Malt, Malted Rye, Flaked Wheat 
Fermentables: Light Malt Extract
Hops: Saaz, Hallertau
Yeast: Belle Saison.

 

“Silly Yak” Gluten Free Beer (Yield: 23 litres)  SPECIAL ORDER

Golden, crisp and refreshing with a touch of honey and a citrusy, hoppy finish.

Description:  This is the answer if you can’t have gluten but you really like beer. A touch of honey adds a unique character. Light and refreshing with a distinct hop flavour. Can be used as a base for gluten free fruit beer. Serve cold. Please Note: While none of the ingredients in this beer recipe contain gluten, we cannot guarantee that they have never been in contact with trace amounts or been processed in facilities that also produce products containing gluten.

Ingredients:  Fermentable- White Sorghum Syrup, Honey, Molasses. Hops- Hallertau, Casecade. Yeast- Nottingham. Irish moss for aid in clarification process. (yield:23L)

Tilford’s Nit Wit  (yield:23L) 

White (Wit) is a light, refreshing summer quencher with citrus notes.

Description:  Due to the light colour and cloudiness, this slightly unconventional recipe includes a special yeast and is delicately finished with and coriander and cascade hops. Serve ice cold with an orange or lemon slice on a hot summer day. 4.8% alcohol by volume.

Ingredients:  Ingredients: Malts – Malts - Dextrin, flaked oats, flaked wheat, light unhopped malt extract, high malt glucose. Hops: Hallertau, cascade, crushed coriander. Yeast - Safbrew WB-06 dried wheat beer
